Totally unsurprisingly I am pretty big on snacks! As we all know, it’s really easy for it to get out of hand. I find that I eat much better during the week because I get prepared and I tend to eat on a schedule when I’m at work. When I already have snacks packed it’s waaay easier to silence the little voice telling me to buy other snacks *cough* chocolate *cough*. Having good filling snacks is also great for keeping energy up throughout the day – nobody likes that afternoon energy slump! I know, I know that’s a lot of healthy talk – I swear it’s still me and not a pod-person… Anywho, let’s make some tasty, chocolaty healthy bliss balls for better snacking!

Put everything except the water in a food processor. I’m making so many things in the food processor lately – it really helps when the thing actually chops rather than pushing food round and round!

Process until fairly smooth – it will take a few minutes to get the almonds ground up finely.

With the processor running, add the water a tablespoon at a time, watching carefully as the mixture comes together. If you like the texture to be really smooth keep processing for a bit longer.

When the texture is how you like it, it’s time to shape these babies! Take tablespoons of the mixture and roll into balls. Roll the balls in coconut and you’re done!

Keep the finished balls in an airtight container in the fridge and grab one whenever you need an energy boost!

Easy right? I find about three of these is a good adult snack at work – each of them is a couple of bites. They’re a great lunchbox addition for kiddos, just make them a bit smaller for little hands.

Apricot Ginger + Chocolate Bliss Balls

– A super quick and healthy snack that doesn’t compromise on flavour –

Ingredients:

  • 1 and 1/3 cups (200 grams) raw almonds
  • 1/2 cup (100 grams) dried apricots
  • 4-5 pieces (50 grams) crystallized ginger
  • 3 tablespoons dutch processed cocoa
  • 3/4 cup (75 grams) unsweetened desiccated coconut
  • 2 tablespoons honey (or more to taste)
  • 2-3 tablespoons of water (enough to bring the mix together)
  • approx 1/2 cup extra unsweetened desiccated coconut (for coating)

– If using metric cups, reduce volume measures by 1 tablespoon for every cup of dry or liquid ingredients – 

Equipment:

  • Food processor

Directions:

Cook’s Notes:

  • These bliss balls are gluten, egg, dairy and refined sugar free.
  • You can substitute other dried fruits or nuts, however you may need to adjust the honey and water to get the sweetness and texture how you like it.
  • Switching out 1/3 cup of the almonds for shelled, unsalted pistachios is a great variation.
  • Add a few tablespoons of pumpkin or sunflower seeds if you like them.

 – These delicious bliss balls can be kept in the fridge in an airtight container for a couple of weeks –
