Hello lovelies! I missed you all last week, the cold-and-flu gods have not been kind to me and my voice is still not back to normal yet! This week we have a super simple recipe for all those people out there (awesome ones) who wish for a snack that tastes like it’s made entirely from the crispy edges of melted cheese. It’s good to have dreams. It’s even better when they come true.
The best part about these delicious bites is how easy they are to make. And how good they taste… okay focus! Put all the ingredients into your food processor on medium speed until a dough forms. This can take a few minutes.
Pat it into a disc and chill in the fridge wrapped in plastic wrap for 15-20 minutes. Put the oven on to 190C (375F). Roll the dough out between two sheets of baking paper to about half a centimetre thick.
The baking paper is a life-saver for cleanup and also a great way to prevent dough from drying out when flour is added to stop it sticking. Using a 1 inch cookie cutter, cut out as many shapes as you can. I re-rolled the scraps a couple of times and found it didn’t do any harm. You can also cut the rolled dough into 1 inch squares with a knife.
Place the bites onto cookie sheets lined with baking paper. They can be fairly close together as they won’t really spread. Bake for 10 to 12 minutes until puffed up and dark golden.
These snacks are incredible while they are still warm from the oven, but the flavour does develop over time after they cool. It’s your call whether to gobble them up while they are warm and pillowy or wait until they are chewy and extra cheesy tasting. Life is full of tough decisions!
Super Simple Savoury Cheese Bites

Quick and easy fluffy chewy cheesy bites – prefect for cheese addicts!
Ingredients:
- 150 grams grated tasty cheddar cheese
- 50 grams grated parmesan cheese
- 3 tablespoons (50 grams) soft butter
- 3/4 cup (105 grams) all purpose flour
- 1/2 tsp baking powder
- 2 tsp wholegrain mustard
- 1/4 tsp smoked paprika
- 1/4 tsp dried mixed herbs
- 1/4 tsp chili flakes
