Oh look, oats! I know I do go on, but look how delicious they can be! When oats team up with cranberries and dark chocolate it’s a recipe for greatness. What more do you need for an afternoon snack at work? How about if they are like totally effortless to make and last all week? Today is your lucky oat-tastic day!
Preheat the oven to 180C (350F). Line an 8 inch square pan with baking paper and set aside. Mix the dry ingredients except for the chocolate and sugar in a large bowl. Easy as.
I know I put the chocolate in at the start but it got all melty and only the larger pieces stayed intact. Do as I say and not as I do – everybody loves being told that…
In a small saucepan melt the butter, sugar and golden syrup over a medium heat until melted and mixed together. You’ll need to stir it a bit – I know, I know that takes a bit of effort but there’s not much left to do! Pour the wet ingredients into the dry ingredients and mix well. Add the chocolate and quickly mix in. You can also press the chocolate into the top once it’s in the tin.
Tip the mixture into the pan. Moisten your hands a little and press it all down evenly.
Bake for 25 to 30 minutes until it’s getting dark gold on top and is bubbling a little at the edges.
Let it cool completely in the pan before lifting out using the baking paper and cutting into squares. I cut mine into 9 adult sized snacks for work, if you’re making these for kids then go for at least 12 pieces.
They will get much firmer as they cool. I had one each day at work for a week and they are still are still chewy and delicious!

Chewy, oaty squares packed with fruit and chocolate – the perfect 3pm pick-me-up!
Ingredients:
- 200 gm | 7.1 oz | 1 3/4 cups wholegrain rolled oats
- 60 gm | 2.1 oz | 1/3 metric cup | 1/3 US cup minus 1 tsp all purpose flour
- 75 gm | 2.7 oz | 1/2 cup dried cranberries
- 75 gm | 2/7 oz chopped dark chocolate or dark chocolate chips
- 2 tbsp pumpkin seeds
- 100 gm | 3.6 oz | 1 stick plus 3 tbsp butter
- 100 gm | 3.6 oz | 1/2 cup gently packed brown sugar
- 2 tbsp golden syrup
