Happy Sunday! I can’t believe how quickly my week off has gone! I got a lot of good time in the kitchen experimenting and cooking up things to share with you all – including these crispy on the outside, chewy on the inside squares. Also can’t wait to see how my Strawberry and Lavender Gin turns out – I will let you know in 2 weeks!
I made these to go into a care package for a wonderful friend of mine who is pregnant with her second – don’t know how all the mum’s out there do it! Everyone who tasted them loved them so I thought I’d better share the love. These are dead easy to make and come out with a crisp, almost meringue-y outside and a jammy, figgy centre – so good!
Preheat the oven to 180C (350F). Line an 8 inch square pan with baking paper and set aside. Beat together the egg, brown sugar, lemon zest and vanilla extract until thick and pale.
Sift in the flour and baking powder and fold into the egg mixture until just combined.
Fold in the chopped figs and walnuts.
Scoop into the prepared pan and smooth the top.
Bake for 20-25 minute until crisp, golden and firm in the centre.
Cool the slice completely before dusting heavily with icing sugar and cutting into squares. Love that crisp cracked top!
These squares keep well and travel well, so pack these up, share them with a friend and make the world a little sweeter!
Fig + Walnut Squares

Ingredients:
- 1 cup (180 grams) lightly packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- approx 2 teaspoons lemon zest (zest of 1 lemon)
- 1/2 cup (80 grams) all purpose flour
- 1/2 teaspoon baking powder
- 1 cup (190 grams) chopped dried figs
- 1/2 cup (50 grams) chopped walnuts
– If using metric cups, reduce volume measures by 1 tablespoon for every cup of dry or liquid ingredients –
Equipment:
- Standing or hand-held electric mixer
- Shallow 8 inch square baking pan lined with baking paper
