Sunshine Punch

Hello my lovelies! This week is brought t you by desperately clinging to warmer days. Bright golden summery-seeming punch today. Golden sunny saffron rolls later on. Let me have this one. I’m wearing two layers of woollen socks. Homemade cordial couldn’t be easier. It’s just juice, a bit of sugar and maybe some extra spice. We are keeping the sugar low today so this one will need to be kept in the fridge. No biggie. Winter citrus is a miracle. Fruit that conjures up bright sunny days and zesty refreshment. And it comes into season right when you need cheering up. Citrus is one of my all time favourite things. Smells good, is a bit bitter on the outside but is a big sunny hug on the inside. A bit like me. This punch also makes great cocktails. Just add your favourite white spirit and you’re away. Now this does have a bit of passionfruit in it. You can still get them in stores here and you only need one. I do recommend getting frozen passionfruit to have on hand when you need an injection of sunshine!

Thoroughly wash and rinse a glass bottle that will hold about two cups.

Scoop the passionfruit into a glass measuring cup. you can use more passionfruit if you like it.

Before you juice, use a vegetable peeler to take a slice of zest off one each of the fruits. These will go in for extra flavour

Juice the orange, lemons and limes into the cup. You are aiming for one cup of juice altogether.

Pour the juice into a small saucepan. Add the sugar and zest strips.

Over a low heat dissolve the sugar into the juice and bring the syrup to a simmer.

Using a funnel and a small strainer pour the syrup into the clean bottle. Leave to cool.

To use your bottle of sunshine, pour a couple of tablespoons over ice and top with sparkling water. An umbrella never hurt anyone either. I don’t have any right now so an illusion of class will have to do.

Ingredients:

  • 1 to 2 ripe passionfruit (to get 2 tablespoons of pulp)
  • 1 large orange
  • 2 lemons, I used Meyer
  • 2 limes
  • 1/2 cup (100 grams) sugar
  • sparkling water, to serve

– If using metric cups, reduce volume measures by 1 tablespoon for every cup of dry or liquid ingredients – 

Equipment:

  • Small saucepan
  • Funnel and small strainer
  • 2 cup glass bottle

Cook’s Notes:

  • You can vary the proportions of juices to your taste and what you have available.
  • If you want a little extra zing, add 3-4 thin slices of fresh ginger root to the syrup while heating.
  • Don’t boil the syrup – it doesn’t need it and the peel can add a bitter note if overcooked.
  • You can replace the sugar with an equal weight of coconut sugar. It will give a more complex flavour and you will need to use the syrup up a little faster.

 – Keep this syrup in the fridge for up to 3 weeks. Making smaller batches more often is recommended –

  1. I grew up with a passion fruit tree in my backyard in Africa so needless to say I am a HUGE fan. I love how refreshing this looks and the notes of three citrus in it. I need to try!!
